Black Bean and Corn Soup

2 versions - vegetarians (meat eaters)

1 package of Morningstar protein crumbles or other meat substitute (3/4-1 lb lean ground beef or venison)
2-15 oz cans black beans, drained and rinsed
2 c frozen whole kernel corn (or 1 15 oz can, drained)
2 c or 1-15 oz. can tomatoes, drained
15 oz water (or 15 oz can ready-to-serve beef broth)
1 T chili powder
3 t cumin

Brown the meat or fake meat in 12" skillet sprayed with cooking spray. Drain if needed. Add remaining ingredients, stir to mix, and bring to a boil. Reduce heat, cover, and simmer 10-15 minutes.

Makes 5 (1 1/3 c servings)

**For vegetarians, the Morningstar crumbles can be pretty dry when cooking and when eating. I'll add a few teaspoons of canola oil for a little more fat and moisture before eating. Also used a brand that makes Smart Dogs, which turned out really nice.

For the single TNOers, this is a good meal to make, put individual servings in a gladware container, and you have your next 5 dinners/lunches ready. Add some brown rice or pasta to make a hearty meal.
