Dijon Chicken

4 boneless skinnless chicken breast halves
4 oz Dijon mustard
1/4 cup teriyaki sauce
1/4 cup bacon bits (or fried deli ham, but bacon tastes better)
1/2 cup grated parmesan cheese (I've also used Mozzerella)

Preheat oven to 400 degrees F

Place chicken in a 9x13 inch baking dish. Spread mustard over the chicken, then pour teriyaki sauce over all. Sprinkle with bacon (or fried deli ham) bits, then cover with cheese.

Bake covered at 400 degrees F for 30-40 minutes.

To make it look nice:

Place one chicken breast on the center of the plate. Place steamed broccoli heads 1/3 way around the outside of the plate, baby carrots 1/3 around plate, and steamed small red potatoes around the other third and sprinkle parsley flakes on the taters. Serve with a Gewurtztraminer and Frank Sinatra's "I get a kick out of you". This way if by some chance you don't like the chicken, at least you had good veggies, good wine, and good dinner music :o).
