Dutch babies

2 T butter
1/2 c milk (soy milk is okay)
1/2 c flour*
2 eggs
1/4 t salt

Preheat oven to 450 degrees. Place butter in a pie pan and place in oven while it's preheating to melt the butter. While butter is melting, whisk all ingredients together. Pour mixture in pie pan and bake for 15-20 minutes, until top puffs up and turns golden brown. Top with powdered sugar and lemon juice or berries and cream.

Makes 1-2 servings. Recipe can be doubled to serve more people - just place batter in two pie plates.

*Note on flour: These don't puff up very well unless you use white flour. They still taste good with whole wheat pastry flour, but they're much more dense and heavy.
