Peanut Butter Pie

KG's Energy Bars

2 c Grape Nuts (or generic equivalent)
2 c quick oats (uncooked)
.5 c honey roasted peanuts
.5 c sunflower seeds (with shells removed)
.5 c soy nuts, chopped
.5 c sliced almonds
3 tbsp wheat germ
optional: any other nut that you might have or like or a scoop of your favourite protein powder
1.5 c brown rice syrup or dark corn syrup
1 c low fat peanut butter (I'm know I'm going to get crucified from the PB junkies on this site for using low fat version)
.25 c sugar
.5 c chocolate chips
.5 c raisins

Preheat oven to 350. Spray a 13" X 9" pan with cooking spray.

Mix the first 7 ingredients (Grape Nuts thru wheat germ)

In a separate bowl, put the syrup, peanut butter and sugar in a microwave-able bowl. Nuke on high for about 45 seconds (adjust according to the power of your microwave). Us a a large spoon to beat the ingredients until thoroughly mixed and smooth.

Pour the syrup mixture over the dry ingredients and mix.

Add in the chocolate chips and raisins and mix. I try to wait just a couple of minutes before doing this so that the syrup does not liquefy the chocolate chips.

Pour into 13" X 9" pan and spread out evenly over the pan. Bake for about 8 minutes and them allow to cool for an hour or two before attempting to cut into squares. I cut into 24 squares and according to my numbers, that translates into about 250 calories each, 37 g carbs, 8 g fat (only 2 saturated), 9.5 g protein.

Feel free to add other items (ie peanut butter chips and sesame seeds) in. If you add a lot of other dry ingredients, you may need to increase the syrup a bit to hold everything together.
